This Thriving Tip was inspired by an email I received last week from someone who has just started to purchase Young Living products

Aimée Christo’s daughter gets really bad period pain. She takes Naprogesic throughout her period. This time it wasn’t working she tried other pain killers and still no relief. She came to me saying don’t we have anything stronger this is so painful. I gave her the Young Living Deep Relief Roll On and said to roll it on where ever the pain was. Tonight’s ‘Thriving Class’: Using Young Living Essential Oils for Everyday Health Issues

A yummy dessert – without sugar, diary or wheat

I just wanted to share this yummy ‘Raw Mango and Lime Cheesecake’ recipe. A friend (thank you Vicki) brought it to a Christmas function and it was so delicious I wanted to see if my family would like it – they are not always fond of ‘healthy’ sweets. Well this one was a REAL HIT ! They even went looking for it when it was gone – with my eldest son saying – maybe you could open a café and serve these ! So here is the recipe …

RAW mango and lime cheesecake

BASE INGREDIENTS:

1 1/2 cups of macadamia nuts

1 cup shredded coconut

3 tablespoons maple syrup or honey or agave nectar

1 teaspoon vanilla extract

1 teaspoon salt (I used 3/4)

FILLING INGREDIENTS:

3 cups cashews, soaked in cold water for about two hours, then drain.

4 cups of chopped mango (I used about 3 mangos)

1 cup nut milk (almond milk)

1/2 cup of maple syrup (or agave or honey)

1/2 cup lime juice

1 tablespoon vanilla extract

pinch salt

pinch cinnamon

pinch cayenne

1 cup coconut oil melted (PLAIN ORGANIC)

HOW TO MAKE IT:

For the base:

Process the macadamia nuts and desiccated coconut in a for processor to a fine meal first.

Next add remaining ‘Base’ ingredients into food processor and process again, BUT do NOT over process; mixture should be crumbly, not like a paste.

Press into a 9-inch round springform cake tin.

For the filling:

Blend ALL ingredients EXCEPT cup of coconut oil, until smooth. You will need a very good blender like a vita-mix or power-mill. Then stir in coconut oil and re-blend til very smooth.

POUR FILLING ONTO CRUST AND CHILL IN FRIDGE FOR AT LEAST FOUR HOURS – this allows it to set.
